1907 Roly Poly (Beef Roll) — Cooking a Hybrid Historical Recipe Today we’re combining two 1907 recipes from the Brandywine Farmer’s Club to recreate something that caught my attention: the mysteriously named “Roly Poly.” The original instructions are wonderfully vague — it simply says: ROLY POLY. “Take a round steak or flank with all fat and bones removed.
